Where & How JET Bourbon Is Made

Distilled, aged, and selected intentionally in Kentucky, never purchased off the shelf.
How is JET Bourbon made?
JET Bourbon is a Kentucky bourbon produced through a distilled-to-specification model, meaning every defining decision in the bourbon process is made before distillation begins. Mash bill style, fermentation approach, proprietary barrel treatment, minimum aging requirements, and single-barrel release standards are all established in advance.
JET Bourbon does not purchase finished or off-the-shelf bourbon. All barrels are produced specifically for the brand, aged a minimum of five years in Kentucky, bottled non-chill filtered, and released only after meeting internal standards for balance, structure, and maturity.
This approach prioritizes intention over availability and quality over speed.
Where is JET Bourbon distilled?
JET Bourbon is distilled in Kentucky by Wilderness Trail, a distillery respected for its fermentation expertise, technical discipline, and commitment to traditional bourbon principles.
Working with a single Kentucky distillery ensures continuity, accountability, and consistency from grain through barrel, while still allowing each barrel to develop its own character during the bourbon aging process.
Is JET Bourbon really made in Kentucky?
Yes. All JET Bourbon is distilled, aged, and bottled in Kentucky.
Kentucky’s hot summers and cold winters create natural expansion and contraction inside the barrel, driving the spirit into the oak and back out again. This repeated interaction accelerates flavor extraction and integration, shaping aroma, mouthfeel, and finish in ways that cannot be replicated elsewhere.
This climate-driven maturation is a defining characteristic of true Kentucky bourbon.
Who controls how JET Bourbon is made?
JET Bourbon controls the design and standards of its bourbon from the outset.
While distillation is performed by Wilderness Trail, JET Bourbon determines:
- mash bill composition,
- yeast selection,
- fermentation goals,
- proprietary barrel specifications,
- minimum aging requirements,
- and final barrel selection.
This ensures the bourbon is produced intentionally for JET Bourbon rather than selected opportunistically after aging.
Did JET Bourbon buy finished bourbon or off-the-shelf barrels?
No. JET Bourbon does not buy finished bourbon.
Every barrel released under the JET Bourbon name was distilled, aged, and matured specifically for the brand. Mash bills are selected in advance, barrels are custom specified, and aging proceeds for a minimum of five years before any barrel is considered for release.
This model is fundamentally different from purchasing open-market bourbon late in the process.
Does every barrel made for JET Bourbon get bottled?
No.
Although barrels are produced specifically for JET Bourbon, not every barrel is released. Each barrel is evaluated individually over time, and only those that meet internal standards for balance, oak integration, mouthfeel, and finish are selected for bottling.
Barrels that do not mature gracefully are simply not released under the JET Bourbon name.
Why does JET Bourbon prioritize time over speed?
Extended aging carries real risk.
Barrels can over-oak, lose balance, or develop uneven structure if left too long. JET Bourbon accepts this risk deliberately, choosing patience over predictability in pursuit of depth and character.
This disciplined approach explains why JET Bourbon releases are limited and allocated rather than produced for volume.
Where do the grains used in JET Bourbon come from?

JET Bourbon is made using Kentucky-grown corn, rye, wheat, and malted barley, reinforcing its connection to local agriculture and regional terroir.
Using Kentucky grain supports consistency, traceability, and alignment with the state’s long bourbon-making tradition.
What mash bills does JET Bourbon use?
JET Bourbon produces two intentionally distinct mash bill styles, each crafted to express a different side of Kentucky bourbon.
High Rye Mash Bill – Family Reserve
- 64% Corn
- 26% Rye
- 10% Malted Barley
- Yeast: 927
This mash bill delivers bold structure, confident spice, and a long, dry finish shaped by rye’s natural intensity.
Wheated Mash Bill – Family Reserve
- 64% Corn
- 26% Wheat
- 10% Malted Barley
- Yeast: 927
The wheated mash bill emphasizes softness and refinement, offering gentle sweetness, rounded oak, and a silky mouthfeel.
Mash bills are defined at the outset to ensure consistency of style while allowing each barrel to express natural variation.
How is JET Bourbon fermented and distilled?
Fermentation is conducted slowly using Yeast 927, selected for its ability to produce depth, balance, and clean aromatic structure. Fermentation quality is foundational, establishing the framework that aging later refines.
Distillation is performed using copper column stills and a doubler, producing a clean yet expressive spirit distilled to approximately 134–137 proof. Entry into the barrel occurs at 110 proof, allowing oak influence to shape the bourbon gradually during aging.
What makes JET Bourbon’s barrel program different?
Barrels are central to JET Bourbon’s identity.
JET Bourbon specifies new American white oak barrels made from 18-month air-dried Missouri oak, selected for its balance of sweetness, spice, and structural contribution. Each barrel features a proprietary combination of toast, char, and knurling, designed to enhance long-term interaction between spirit and oak.
Exact specifications remain proprietary. What matters is the outcome: barrels that support extended aging, deliver layered complexity, and preserve balance rather than forcing early extraction.
How long is JET Bourbon aged?
All JET Bourbon is aged a minimum of five years in Kentucky rickhouses.
This extended aging period allows oak sugars to integrate naturally, tannins to soften, and flavors to develop cohesion and depth. JET Bourbon ages longer than the legal minimum because maturity – not speed – defines the final whiskey.
How does Kentucky’s climate affect JET Bourbon’s aging?
Kentucky’s climate plays a direct chemical role in maturation.
Seasonal temperature swings expand and contract the barrel, driving whiskey into the oak and back out again. This repeated interaction accelerates extraction and integration, shaping aroma, mouthfeel, and finish in ways that cooler or more stable climates cannot replicate.
Does JET Bourbon control the aging and selection process?
Yes.
While distillation is performed by Wilderness Trail, JET Bourbon controls aging standards and final barrel selection. Barrels are evaluated repeatedly over time, and only those that meet internal quality benchmarks are approved for release.
This is especially important for single-barrel bourbon, where balance cannot be corrected through blending.
Is JET Bourbon a single-barrel bourbon?
Yes. JET Bourbon is released as single-barrel bourbon.
Single-barrel releases reflect JET Bourbon’s commitment to transparency and authenticity. Each barrel is allowed to express its own character, and no two releases are exactly alike.
Is JET Bourbon chill filtered?
No. JET Bourbon is non-chill-filtered.
Non-chill filtration preserves natural oils and compounds that contribute to mouthfeel, aroma, and flavor complexity. This approach prioritizes flavor and texture over cosmetic clarity.
Where is JET Bourbon bottled?
JET Bourbon is bottled in Kentucky by Bluegrass Bottling.
Bourbon is proofed using Kentucky limestone water, prized for its purity and mineral balance, and bottled with care to preserve the integrity of every single barrel.
How is JET Bourbon made from grain to glass?
JET Bourbon follows a deliberate, patient production process designed to prioritize quality over speed at every stage.
- Grain: Kentucky-grown corn, rye, wheat, and malted barley
- Fermentation: Slow fermentation using Yeast 927 for depth and balance
- Distillation: Copper column stills and a doubler yield a clean, complex spirit
- Aging: Minimum five years in 18-month air-dried American oak barrels
- Bottling: Hand-selected barrels, non-chill filtered, proofed with limestone water
Each step is intentionally designed to allow flavor, structure, and character to develop naturally over time.
Why does JET Bourbon follow this production approach?
JET Bourbon is built on intention rather than availability.
From mash bill design through aging and single-barrel release, every step is defined in advance and executed in Kentucky. The result is a bourbon shaped by discipline, patience, and respect for the craft – not shortcuts.
